     "An apple a day keeps the doctor away"---We've all heard it before, and what better way to eat an apple than in a pie!?! For this recipe I continue to use the same pie crust that I used for all previous pie recipes. If you find yourself wanting a change with the crust then feel free to swap the pecans for almonds, cashews or walnuts! You could even use a couple different nuts for the crust to give it an extra kick.
     I decided to try coconut ice cream once and for all and it is  AMAZING! I like it much better than soy ice cream. The cost of Luna & Larry's coconut ice cream is comparable to Haagen-Dazs but it contains zero refined sugars and it is vegan. There are so many different flavours that I had to add the link for you to see for  yourself. (link is at end of this post) 


- 1 apple
- 3 dates
- 1 tbsp agave
- 1 tbsp water
- 1/2 tsp cinnamon

1. Slice the apple into thin pieces. 
2. Blend dates, agave, water and cinnamon in food processor until a paste if formed.
3. Put apple slices in a bowl and cover with paste, make sure all apple slices have been glazed. 
4. Place apple slices in pie crust and layer one on top of the other.
